In 2009, the Heydar Aliyev Foundation published a
booklet in English about the Azerbaijani cuisine. Being one of the richest and
tasteful cuisines of the world, the Azerbaijani cuisine has been an integral
part of the country’s centuries old culture. The modern Azerbaijani cuisine has
been formed for millennia by our ancestors living in the modern Republic of
Azerbaijan and those that had lived in the Southern Azerbaijan (now
northern provinces of Iran), Iravan
Khanate (now Armenia), Borchaly (Georgia), Derbend (Dagestan Autonomous
Republic) and other territories of the region.
The booklet contains general information about the Azerbaijani cuisine, and talks of the methods of preparation and specific features of various dishes, sweets and drinks.
